About
Welcome to Pivovar, a culinary gem nestled in the heart of Waco, Texas. This esteemed Czech restaurant and brewery is located at 320 S 8th St, just a stone's throw away from the iconic Magnolia Silos. What sets Pivovar apart is not only its exquisite food but also its vibrant atmosphere, thanks to the brewery vats that surround diners, creating an authentic brewpub experience.
Pivovar's menu is a delightful homage to traditional Czech cuisine, elevated with a local twist. Start your meal with the Beer Battered Onion Rings, perfectly fried to a golden crisp and served with classic ketchup for that nostalgic kick. The Brussels Sprouts are a must-try, tossed in a secret sauce that ignites the palate with unexpected flavors. And don’t miss out on the Czexan Potted Beer Cheese, a rich and creamy spread paired with house sausage and fig preserves—a combination that embodies hearty comfort.
The main courses are where Pivovar truly shines. The Czexan Schnitzel is exquisite, featuring fried pork that melts in your mouth, garnished wisely with a side of mashed potatoes and a spritz of lemon. If you're feeling adventurous, go for the Texas Pocket Schnitzel, where jalapeños spice up the classic dish, delivering a delightful contrast. Also noteworthy is the Pork Shank, braised to perfection and bathed in a luscious garlic-ginger rosemary sauce—a dish that will leave an indelible mark on your taste buds.
For those with a sweet tooth, finish your dining experience with a cleverly crafted dessert. Options like the Red Velvet Revolution Cupcake and Creme Bruleed Cheesecake offer a satisfying conclusion that’s ideal for sharing—or not! The rich flavors make for a heavenly finale.
With its exceptional craft beers brewed onsite, including the praised dark lager, Pivovar is a dream space for both food aficionados and casual diners alike. The welcoming service reflects the warm and friendly atmosphere, with staff eager to ensure your experience is nothing short of delightful. “ My wife absolutely loved this hotel! It's perfectly located right next to the Magnolia Silos complex, and you’re welcome to leave your car parked there for the rest of the day after checkout. The hotel has an elegant vibe, with thoughtfully chosen furnishings that create a warm, sophisticated atmosphere. The Czech restaurant and brewery downstairs is also a fantastic spot for dinner. While it’s a bit more expensive than a standard hotel, it’s well worth it. I would definitely stay there again. ”
“ My family and I made reservations for lunch the Saturday before mother's day. It was an excellent dining experience! Dining among all the brewery vats (not sure what they're called) really gave it an excellent atmosphere. We got a couple appetizers, including the Brussels sprouts (so good! What was in their glaze/sauce?!), fries, a pretzel to share and the sauerkraut, which was very nice. Two in our party got the sausage sampler for the entree, with one going for gluten free (that just means they give you all of the one sausage that fits with the restrictions - still very delicious), two of us got schnitzel (one stuffed and one classic) and my step mom got the salmon. The schnitzels were so crispy, but still light. My stepmom's salmon was a really nice sized portion and was perfectly cooked. My brother in law tried their beer and loved it. We'll definitely be back! ”
“ We live in Waco and we love this place. The food is great - the short rib goulash is super tender and flavorful, the chocolate cake is perfect with a scoop of vanilla bean ice cream, and the drinks are excellent. They have several Czech-style beers brewed specifically for the restaurant, all of which are wonderful - if you can't decide on one, try the dark lager. It's flavorful while still feeling less heavy than a lot of other dark beers. Most of all, the service is fantastic. We've been coming here for a few years and have never had a bad experience. Shoutout to Adrian, Noah, Morgan and the rest of the staff for creating a friendly and welcoming atmosphere. Y'all are the best. ”
“ We love Czech cuisine & when we saw Pivovar, we decided to stop by for lunch. When we come back to Waco, we are definitely coming back here! Their beer & wine are so good and goulash & pork shank with mashed potatoes are to die for. Amazing customer service too. ”
“ My husband and I stopped at the restaurant bar for drinks and apps prior to dinner. It’s in a great location right next to the Magnolia area. Our bartender Dillon provided excellent service and really made it a fun/happy atmosphere. I highly recommend getting the soft pretzel. It was really delicious. ”
“ I only tried the restaurant, not the hotel. Food was excellent. Every single bite was exquisite. A little pricy but well worth it. Nice atmosphere as well. Their beer is excellent too! Only thing that could make it better would be to have a choice for brown mushroom gravy on the schnitzel. They have white cream but I think I like the brown kind better. ”
“ This was the perfect location for a great meal before hitting the Silos at Magnolia. Do to being a tourist attraction many of the stores can be a bit pricey including the surrounding restaurants. But it is well worth it if you are a local near and around Central Texas looking for a getaway for the day. Pivovar is a beautiful location celebrating the local Czechoslovakian culture. Being the first time here we took our waitress suggestion as to what to order and we were not disappointed. From the drinks to dessert the meal was filling and the atmosphere was clean and full of corners filled with surprises. From the brewery to the blown glass, we felt very comfortable in this new found restaurant. Parking is available around back and ADA friendly. Lots of swag to purchase if you’re a collector of foodie locations. We did not stay at the hotel. We did enjoy our visit. ”
“ We stayed in the standard 2-bed hotel room. They offer king and suites too. We stayed one night. We got a discount for a walk-in reservation on our impromptu girl's trip. The hotel is very secure as doors lock early in the evening and your room key allows access. It is a smaller, boutique type hotel with 20 to 30 rooms. The decor is modern yet traditional with real wood furniture, arm chairs, and glass accents. Loved the large bathroom with double sinks and relaxing shower. Near the train, but it wasn't a distraction. Staff were friendly too. In room coffee with actual creamer instead of powdered kind was very nice. You can see the Magnolia property from some rooms as it is across the street. It is within walking distance to many tourist attractions and fun spots in town. ”
